Bill’s will open in the unit formerly occupied by Villagio Italian restaurant – which closed its doors last month after three years of trading in the town. It was previously occupied by Eat Fish.

Open from early in the morning for breakfast, throughout the day and into the evening for supper, Bill’s caters for every occasion.

The fastly growing food chain aims to offer fresh and seasonal food from friendly staff and a relaxed and welcoming atmosphere.

Founder of Bill’s Bill Collison said: “Berkhamsted is a lovely little town, with some beautiful buildings, and we are really pleased to be opening a restaurant here.

“The restaurant is in a Grade II-listed building, and has masses of charm and character – plenty of low beams and nooks and crannies.

“It has a terraced garden to the back, and a private room to hire for gatherings and celebrations upstairs.

“I think what makes us a bit different is the effort we put into everything, from the menus and staff training, to me picking bits and pieces up from auctions and antique fairs to give the restaurant a really welcoming feel.

“Bill’s has a real bustle during the day and then, come the evening, we get the candelabras glowing and it’s a really different vibe.”

The Berkhamsted Bill’s will offer everything from an early morning coffee and bowl of porridge to a candlelit dinner and decent glass of wine in the evening.

Whether you want to sit quietly in a corner with your laptop or celebrate a birthday in style, its staff hope to make sure you have a good time.

Berkhamsted’s Bill’s will be open for breakfast, lunch and dinner every day – from 8am to 11pm Monday to Saturday and 9am to 10.30pm on Sundays and bank holidays.

Its launch follows on from a the swift success of a Bill’s that operates in the centre of St Albans at the moment.
