A Berkhamsted gastropub is offering customers the chance to dip into the first British asparagus of the season.
British asparagus is only around for a few precious weeks.
So to make the most of the delicious veg, the chefs from The Old Mill, on London Road, sent out a team to track down the first truly British asparagus of the season.
They found it grown on a small family farm owned by John Barfoot in Botley, Sussex, where the microclimate is as warm as anywhere in Britain and the spears get the long, high light levels and the warm soils which make for the best early asparagus.
Head chef Sebastien Woelffle said: “When it comes to their asparagus, you can’t find better. Not only is it grown slowly, it’s grown with love and harvested totally by hand.”
To make the most of the homegrown produce, which is only around for a short time, Sebastien and his team have come up with a novel way of serving the delicacy.
Customers are invited to ‘Dip Your Own’ British asparagus into a pot of delicious homemade Hollandaise sauce, grated egg and Parmesan.
